2 Easy Vegan Smoothie Bowl Recipes
Happy New Year, friends! This is my first post in 2017. Jesse and I are back into our normal routine around here - and confession - we only finally got rid of our Christmas tree today! January 10th, haha. I guess it could have been worse. Have you made any new years resolutions? I always write a detailed list of goals for the year ahead. Its been found that writing goals, as opposed to just thinking or saying them, makes them much more likely to come true. So get writing your wishes down on paper!
Today I have 2 new vegan smoothie bowl recipes to share with you. These are super popular these days but if you're not familiar, its basically just a really thick smoothie served in a bowl with toppings like granola, fruit, nuts, seeds, chocolate, even sauces and nut butters, and you eat it with a spoon. They're really filling, nutritious, and delicious!
And by the way, if you're thinking that my bowls look fancy schmancy and you don't have time or kitchen skills, I can assure you that these bowls are deceivingly EASY to make - and to decorate. I didn't have to make anything special to garnish. You might be surprised 😉
After all the overindulging during the holiday season its nice to lighten things up with more fruits, veggies, and watery foods - smoothies and smoothie bowls are a perfect way to do that!
You can buy bowls at juice and smoothie bars but they can be pricey and/or contain not-so-healthy ingredients like frozen yogurt, sugary juice blends, or cheap whey protein powders. The solution?! Make your own at home. Its a snap, you just need the right ingredients (which can be found at any grocery store) and a blender!
First, I have an iron rich vegan chocolate smoothie bowl for you. I came up with this recipe because I've been trying to incorporate more iron rich foods into my diet. Since raisins, unsulphured blackstrap molasses, and chaga are all known to contain a decent amount of iron, I thought I'd combine them together. If you've only ever eaten molasses in gingerbread cookies, let me tell you that it's very strong tasting on its own with a touch of sweet but slightly bitter. I promise that it works in this recipe though!
Iron Rich Vegan Chocolate Smoothie Bowl
1/3 cup brewed chaga tea*
1/3 cup packed raisins
1/2 frozen avocado**
1/2 cup full fat coconut milk
1 tablespoon molasses, plus more to drizzle
2 tablespoons cacao powder
1/4 cup soft dates
1/2 teaspoon vanilla extract, optional
6 large ice cubes
Soak the raisins in the chaga tea (either soak them in chilled chaga tea and let sit for at least 4 hours to soften OR soak them in the hot tea but only use once cooled). Blend all but the ice cubes in a high speed blender until smooth. Add the ice and blend again smooth and frosty. Eat immediately.

Here's a secret: molasses and tahini make the perfect drizzle to garnish a smoothie or dessert!
I topped it all off with coconut molasses hearts. These are EASY to make. I drizzled a little molasses into a heart shaped silicone mould and then poured melted coconut butter on top. Once set, I popped them out and voila!
Isn't it amazing how just a few simple garnishes really elevate a simple dish? Tahini, molasses, and a combo of crushed and whole cacao nibs were perfect and tasty touches here. Its also fun to swirl it all around!
