Apple Cinnamon Chia Porridge

I ended my last post with a photo teaser of today's recipe. I made this easy recipe last week when I was in the mood for porridge for lunch. Mid morning I knew I wanted it so the timing was perfect since it takes about 30 minutes for the mixture to thicken completely. You can also make it the night before - or shake it all up in the morning while you're getting ready for the day and then eat it when you get to work.

Sprinkle with more cinnamon and throw a few pecans or other nuts on top if you like. Cacao nibs would also be nice for more of a crunch.

Apple Cinnamon Chia Porridge

Fluffy chia porridge. Mmm! Next I'm going to try it with pears!

1 medium apple, peeled, cored, and quartered
3/4 cup coconut milk (I used vanilla So Delicious)
1/4-1/2 teaspoon cinnamon, or to taste
2 tablespoons chia seed
Few drops stevia

Blend the apple and coconut milk in a blender until smooth.
Pour into a mason jar. Add the cinnamon and chia. Stir or shake.
Allow the mixture to sit for at least 30 minutes (I like to shake the jar periodically).
Sweeten with a few drops of stevia before eating.

I'm gonna throw in a little chocolate just for good measure here 😉 No recipe for this because it was an "odds and ends" creation but I'm calling it Milk Chocolate Mousse (raw vegan) and it was absolutely delish.

I spooned my favourite raw chocolate sauce in the bottom of the glass and piped the chocolate mousse on top, drizzled more chocolate sauce, and sprinkled cacao nibs and candied pecans on top. Divine I tell you!

    I have never made chia pudding because I'm not a huge chia fan. The texture gets me. But lately, I've been wanting to try it. I think I'll make this!! :)
