In my Summertime Banana Cream Pie recipe post I mentioned that I'd soon share a recipe for nut free banana pudding, and here it is! A lot of people do ask for nut free recipes so I like to make them and share for the people who can't have nuts (my best friend is one of them). Plus, sometimes I feel like something different too.
These parfaits are so easy to put together, and really this is more just a pudding recipe layered with a few odds and ends to make a pretty and tasty parfait. The sweetness comes mostly from the banana and coconut butter in this recipe with the addition of a bit of coconut nectar.

As I said in the banana cream pie post, remember to add the turmeric and lemon juice to prevent the pudding from turning grey!
