Chocolate Strawberry Parfait

One of the greatest things about summer is all the fresh fruit that grows. Up here in the north we are blessed with berries - blueberries, raspberries, and strawberries. The wild blueberries grow rampant in the forest, raspberries grow wild and in the yard, and there are strawberry farms in the area which we stock up on. I like to get enough berries to freeze for the rest of the year. Right now I'm into my last bag of frozen strawberries from last summer and the new ones will be ready for picking in 2 weeks - so you know what that means! I'm working to use up the old ones.

I was in the mood for some strawberry pudding and only intended on making that... until I scraped the last of it from the vita mix into a bowl to chill and the thought occurred that before washing the blender I could make a chocolate pudding too. Afterall, chocolate and strawberries go hand in hand. Then I had a vision of the puddings layered with some of my favorite raw chocolate sauce and crunchy cacao nibs - and it came to fruition! Many of you have written asking for nut free recipes, so you're in luck here.  This raw pudding parfait is nut free!

Chocolate Strawberry Pudding Parfait

To make the parfait, simply layer the two puddings together along with some optional chocolate sauce and cacao nibs. You can throw in some fresh chopped strawberries too, or even raspberries would be nice.

Strawberry Pudding

Note that I only use small strawberries from the local farm that are so flavourful and sweeter than the big store bought ones... you may possibly need to add an extra bit of coconut nectar to get the sweetness to where you want it to be. And it you want a stronger strawberry flavour see if there's a farm in your area too.

1 1/2 cups diced strawberries
1/3 cup coconut milk*
1 tablespoon coconut nectar
4-6 drops stevia
1/2 teaspoon lemon juice
1 teaspoon pure vanilla extract
2 teaspoons psyllium
3 tablespoons melted coconut oil

Blend all but the coconut oil until smooth and creamy.
Add the oil and blend again to incorporate.
Chill for at least 4 hours or cold and thickened.

*Full fat canned OR make your own raw by blending young coconut pulp/water (must be thick)

Chocolate Pudding

You can make thi more of a dark chocolate pudding by adding less sweetener or add a few drops of stevia to make it more sweet. This pudding is firmer than the strawberry pudding so I used a piping bag to put it into the cups for serving. More like the consistency of a thickened whipped cream. Use less coconut oil if you want it slightly thinner.

2/3 cup coconut milk*
2 tablespoons cacao powder
3 tablespoons coconut nectar
1 tablespoon chia
1 teaspoon pure vanilla extract
2 1/2 tablespoons melted coconut oil

Blend all but the coconut oil until smooth. Add the oil and blend again to incorporate.
Chill in the fridge until cold and thickened.
