Easy Peach Pudding Cups

The end of summer is in the air. I can feel it more and more each day. The leaves are starting to turn color, the temperature has cooled down significantly especially at night, and the days are getting just a bit shorter. Despite the shift, I'm still enjoying summer fruit. I recently posted a Peaches N Cream Cake, and today I'm sharing another peach dessert but something much simpler - perfect when you don't have the time to make a cake or a fancy dessert.

Peach pudding is creamy, fruity, and light. I topped it with fresh blueberries, peaches, and the coconut crunch topping that I love so much. Gotta have all textures covered - I'm big on textures. I'm partial to creamy, crunchy, and chewy in a dessert. Don't have time for coconut crunch? Simply throw a few chopped nuts on top if you so desire.

Easy Peach Pudding

4 packed cups diced peaches
1 cup cashews
3 tablespoons agave
1 1/2 tablespoons lemon juice
4- 6 drops stevia
1 tablespoon melted coconut butter*

Combine all ingredients in a high speed blender except coconut butter, until smooth.
Add butter and blend to incorporate.
Pour into little bowls or ramekins.
Chill for a few hours. Top with your favourite fruits or eat straight up.

*Or try 1 1/2 tablespoons melted coconut oil
