Mint Chip Protein Shake

Yesterday I got inspired to change up my regular berry protein shake routine when I came across some fresh mint in my fridge that needed to be used up (the mint from the pad Thai I just posted about). I immediately invisioned a thick, frosty, minty drink and therefore the following drink was born.

And look! The shake goes with this cute tree froggie in Australia. It didn't mind us snapping lots of photos.

Anyway, back to the green shake! Easy mint chip shake. The avocado is optional but makes it extra creamy. You can do 2 smaller servings or 1 large serving. I drank about 3/4 and froze the rest in ice cube trays for another time.

Mint Chip Protein Shake

1/2 cup full fat coconut milk
1/2 cup packed spinach
2 tablespoons packed mint leaves
1-2 drops peppermint essential oil*
1/3 cup vanilla protein powder of choice
1 heaping cup ice cubes (8 regular sized)
2 spoonfuls avocado, optional
Stevia, to taste
2 teaspoons cacao nibs

Blend the milk, spinach, mint, protein, avocado, and ice until smooth and frosty. Taste. Add stevia and cacao nibs.
Blend again very briefly breaking down the nibs into little bits.

*I used 1 drop Young Living peppermint essential oil.

Garnish with cacao nibs and extra mint leaves!
