New Video, Vegan Pumpkin Truffle Pops

Happy Tuesday! I first want to thank those of you who checked out my new YouTube channel (I've since made a fun banner for it) and watched my Pumpkin Parfait video 😀 Its a fun and different way for me to share recipes. My next recipe is going to be something savoury. Yup!  Today I've posted a new recipe video HERE for Pumpkin Truffle Pops that are vegan, gluten free, grain free, and refined sugar free. Oh man, they're so good!! Ive been a bit pumpkin obsessed lately. I just love it.  In fact tonight I roasted up a whole pumpkin from the farmers market for dinner. Mmm, I even eat the peel. Anyway, this would be a great thing to make with your kids but really anyone of any age would love these… and you can omit the stick altogether and just make pumpkin truffles.

Someone commented that they'd like to see the ingredient list printed out so they don't have to stop and start the video so here are all the ingredients.

Vegan Pumpkin Truffle Pops

Ingredients:

1/2 cup cooked pumpkin puree

1/3 cup + 1 tablespoon melted coconut butter

2 tablespoons melted coconut oil

3 tablespoons coconut sugar, ground

1 tablespoon maple syrup or coconut nectar

1 1/4 teaspoon cinnamon

--------

2-3 cups dark chocolate

1 tablespoon melted coconut oil

And now I need your help! I need your imput. What recipe videos would you like to see from me? I'm going to be doing something savoury in my next video and here are my ideas so far:

  1. zucchini boat pizzas
  2. kale caesar salad
  3. my favourite roasted Brussels sprout dish
  4. other??

    Hi Heather! It's nice to see you back and congratulations to you and your husband on your marriage, you both looked fantastic, loved seeing the pictures! I would love to see the video on your favorite Brussels sprout recipe! They are in season where I live, northeast US. : )

      Hi Erin, thank you so much for your lovely message! I finally found "the one" lol. Ok! Thanks for your input on the recipe, its definitely a good Fall/Thanksgiving dish and has turned my friends into brussels sprout lovers.

    Raw vegan versions of either egg rolls or grilled cheese sandwiches. (As far as I know, no one has ever made these.)
