Peanut Butter Ice Cream Sundae

Last week I was in the mood to make ice cream. There are countless options when it comes to ice cream but somehow my mind settled on the tasty vegan peanut butter ice cream I made last summer. I folded peanuts into the ice cream and drizzled raw chocolate sauce on top. This time I made a slight variation on my original recipe to make it even more rich and creamy.

As I went back to my old peanut butter ice cream recipe, I was reminded of the vegan ice cream sundae challenge I hosted last year. Remember how much fun that was? So many awesome entries! You can  check them out HERE.

This time I topped it with the same chocolate sauce as last time, a drizzle of peanut butter, and chopped up raw caramel pecan choccie clusters.


Vegan Peanut Butter Ice Cream

1 can full fat coconut milk
1/3 cup peanut butter*
1/4 cup coconut nectar
2 teaspoons pure vanilla
1/8- 1/4 teaspoon himalayan salt

Blend all ingredients together in a blender until smooth.
Chill in the fridge until cold, at least 6 hours.
Process in an ice cream machine according to the manufacturers instructions.
Optional: Toward the end of churning (as the ice cream is thickening) add some peanuts.

*Raw or roasted, unsalted

J and I have just returned from being at his family's cottage near Ottawa for the week. It was so nice to get away and get heaps of outside time. The weather was sweltering hot so we were in the water a lot.

There was lots of boating, wakeboarding, and waterskiing happening! J makes wakeboarding look easy!!! He taught me how to do it too and I had an absolute blast. Loved it and want to do it again and again. I went waterskiing too and popped right up - no falling at all. It had been almost 20 years since the latst time i waterskied as a kid.
