Peppermint White Hot Chocolate

It's been far too long since I posted a recipe here! I've been pouring energy and time into my raw dessert book and it's going great. I'm having such a blast coming up with new recipes, and a few days ago was the first photo shoot with the photographer. It was an absolute blast! Lots of work yes, but so much fun. I posted a photo on facebook that you can check out and another one on instagram.

The other day I decided to dream up something festive to share with all of you. White chocolate came to my mind... hot chocolate... and there it was. Peppermint white hot chocolate was born. Raw of course, but warmed gently to go with the cold wintery days. A side of raw white chocolate to snack on was just what the doctor ordered!

You could definitely make an iced version too! After blending it, add ice cubes and extra sweetener and blend it up.

I've used xylitol to sweeten the drink to keep it white and because it's a great low glycemic sweetener that has no impact to blood sugar. I'm sure we could all use a little of that during the holiday season when most of us are indulging in more sweet things than usual.

Peppermint White Hot Chocolate

Serve warm with a few chunks of raw white chocolate while listening to Christmas music or watching a Christmas movie! 🙂

3/4 cup almond milk
1/4 cup cashews
1 tablespoon xylitol, or to taste
1/4 teaspoon pure vanilla extract
Pinch of salt
1 tablespoon melted coconut butter
2 1/2 teaspoons melted cacao butter
1-2 drops peppermint essential oil*

Blend the milk, cashews, xylitol, vanilla and salt until completely smooth.
Add the butters and essential oil, starting with 1 drop, and blend to incorporate.
Warm the hot chocolate in a pot on the stove on low heat.
If you want it frothy blend again after warming it.

*I used Young Living Essential oil which I like best. Its really strong so only a tiny bit is needed. I started with one drop and it was good but I wanted a touch more so added a second drop and it was a bit too much. You can use whatever brand you like.
