Raw Cherry Amaretto Ice Cream and Latest Creations

Last week with an abundance of fresh cherries I was inspired to make some tasty and refreshing. Besides eating many handfuls, I incorporated them into my raw chocolate cheesecake - I added a layer of halved cherries between the crust and the cheesecake filling, and topped the cake with more fresh cherries. It was the perfect balance of rich and creamy with the juicy fruit. But the super refreshing dessert I made was this cherry amaretto ice cream.

This vegan ice cream is so thick, luscious and yet refreshing with heaps of flavour. Chopped almonds or any other nut or cacao nibs would be nice in here too if you like a little crunch in with your creamy. Or just sprinkle them on top. Oh, and in an unpictured serving of this ice cream we enjoyed raw chocolate sauce on top because lets face it, chocolate, cherries, and coconut go so perfectly together!

Cherry Amaretto Ice Cream

1 cup + 4 tablespoons coconut milk*
1/2 cup water
8 tablespoons irish moss gel
5-6 tablespoons coconut nectar
2 teaspoons pure almond extract**
1 teaspoon pure vanilla extract
Few pinches salt
8 tablespoons melted coconut butter
----------------
1 cup chopped cherries

Combine all but the coconut butter in a blender until smooth and creamy.
Add the coconut butter last and blend to combine.
Chill for at least 6 hours in the fridge or until cold.
Process in an ice cream machine according to manufacturers instructions.
Toward the end of churning add the cherries in. Make sure its right at the end because the cherries will start to bleed into the ice cream.
Transfer to a container and freeze for a few hours.

*Blend fresh young coconut pulp and water together for a thick creamy milk OR full fat coconut milk.

**There seems to be a strength difference between all natual/pure and "regular" almond extract. Get the good stuff!

My bestest friend of 25 years, Lauren, came to visit last weekend. She now lives far away in another part of the province and we only see each other 1-2 times a year. We went to an awesome lakefront restaurant for dinner. She's the one who designed some of my ebooks.

Raw falafel wraps! I taught a dehydrated recipes class on the weekend and falafel was one of the featured items. These wraps consist of romaines, zucchini hummus, crunchy dehydrated falafel, tangy cucumber cashew herb sauce, and a toss of veggies. I might share more on this in another post.
