On the weekend our friend's hosted a Thai dinner party at their cottage on the lake. Such a great theme right?! I brought raw pad Thai and veggie rolls in rice paper wraps. I couldn't resist bringing a sweet treat too. There was no real reasoning behind these bars other than that I have a ton of dates and almond flour on hand. I almost brought fruit crumble but I'll save that for next time when I can get my hands on the strawberries I keep talking about (4 days until they're ready for picking ;).
So I present you with Raw Chewy Chocolate Squares. These gems are sweetened only with dates, giving them a slight bit of chewiness. The big decision was what to top them with. I almost topped with coconut whipped cream which I thought would a nice fluffiness but in there end there wasn't time so I drizzled some raw chocolate and sprinkled raw coconut flakes on top instead. I think they turned out pretty darn delicious! I hope you like them too. I think they'd made a great picnic addition but make sure to keep 'em cold. I think that if left in the sun or heat for long they'd get too soft to eat with your hands.
Chewy Chocolate Squares
1 1/4 cup almond flour*
3 tablespoons coconut flour
1/2 cup pitted dates, chopped**
2 teaspoons water, or as needed
Combine the flours and dates in a food processor until ground down. Add water starting with 1 teaspoon. Pulse to combine. Add the second teaspoon if needed so that the mixture holds together when pressed.
*Either blanched almond flour (which is what I used) or finely ground almonds (sift to get out the leftover chunks)
**Measure 1/2 cup pitted and then chop.
1 1/2 cup well packed, pitted dates
1/2 cup coconut milk
9-10 tablespoons cacao powder
1/4 teaspoon vanilla bean powder (what I used) or 1 teaspoon pure vanilla extract
1/8 teaspoon salt
1/4 cup melted coconut oil
Puree the dates in a food processor (may have to scrape down a few times).
Add the coconut oil, cacao, vanilla and salt. Puree again until smooth.
Once the mixture is completely smooth (takes a few minutes), add the oil and process until its incorporated.
Spread the mixture over the crust.
Chill in the fridge for 8-12 hours or in the freezer for 4-6 hours.
Drizzle raw chocolate
and coconut flakes on top (after chilling). Slice into bars.
*Full fat canned or fresh young coconut pulp blended with water = must be thick. OR thick cashew milk.
Oh and fear not if you don't care for dates because once everything is mixed up, you wouldn't know there are dates in here.
