Raw Coconut Cream Squares and a GIVEAWAY

Hello! I hope you're having a great week! There are have been more amazing chocolate zucchini cake remakes and I looove seeing them. I always re-post in my instastories with your credit so make sure to tag me if you've made it (or any recipe of mine and I'll share). Priscilla and I have just filmed a recipe video for it as well which I'll share soon.

Today's recipe is for the coconut lover! These raw vegan coconut cream squares are YUMMY and are easy to make.

A nut-free coconut cream filling sits on a chewy cashew coconut crust, all drizzled with chocolate sauce and sprinkled coconut flakes. You could turn this into an entirely nut-free treat by subbing in hemp hearts or pumpkin seeds for the cashews in the base.

Coconut Cream Squares

Raw- Vegan - Gluten Free - Nut Free Option

Base

1 3/4 cup shredded coconut

3/4 cup cashew pieces*

3/4 cup pitted lightly packed dates

1 1/2 - 2 teaspoons of water

Grind the coconut and cashews to flour in a food processor. Add the dates and water. Process until it forms a moist dough. Press into the bottom of the pan.

*Sub in hemp hearts or pumpkin seeds (or both) for a nut-free option.

Coconut Topping

2/3 cup + 1 tablespoon melted "Let's Do Organic" creamed coconut (or coconut butter)

1 teaspoon pure vanilla extract

3 1/2 tablespoons coconut nectar

3/4 cup warm water

1/3 cup melted coconut oil

Blend all ingredients until smooth and creamy in a blender. Pour over the base. Chill in the fridge for at least 4 hours or until firm. Slice into squares (they cut very easily), drizzle with chocolate sauce, and sprinkle with coconut flakes.

Chocolate Sauce

2 tablespoons coconut nectar

2 tablespoons cacao powder, sifed

2 tablespoons melted coconut oil

1-2 teaspoons hot water

Whisk all ingredients together until smooth. It should be thick, glossy, and smooth. Make sure it stays warm or it won't be as fluid.

    My favorite is coconut oil. I use it in place of shortening in many recipes. Biscuits are the most common thing I use it in, but homemade tortillas would be my favorite use.

    I am slightly addicted to anything and everything COCONUT...I guess you could say I am NUTS for coconuts. My favourite is unsweetened shredded coconut which I toast ever so slightly..it is the secret ingredient in my cookies and cakes.

    I like fancy grade coconut flakes! I make superfood chocolate covered flake and sprinkle them on my smoothies ice cream or just as a snack! Yum coconut!

    You're absolutely right: Coconut Milk. I used it as a dairy replacement in so many recipes. Between smoothies and "peanut butter spaghetti" (kid's name for satay sauce and noodles). Yum!

    Condensed Coconut Milk is my favorite, it saves me so much time when I want to make multiple layer bars. Or in any recipe that calls for sweetened condensed milk. I can't ingest dairy and use coconut milk products a lot. Thanks for offering this great contest. Love your recipes.

    I have recently been obsessed with homemade coconut yogurt made from canned coconut cream! Scoop the cream from the top of a few cans of refrigerated coconut milk, mix in a few probiotic capsules (remove the capsules and dump in the powder). Stir it all up in a sterilized bowl and cover. Leave it in your over (turned off!) overnight. The next day, you wake up with perfectly tangy dairy-free yogurt! And I tried to subscribe but the top right button I see brings me to Flickr! Might be because I'm on my phone? Anyhow, I can't wait to try this recipe! I seriously love EVERYTHING coconut! Thank you!

    We love coconut flakes (as is!!!!) As a delicious snack!!! Sometimes we will put them in the oven for a quick roast but I'm happy munching right out of the bag!

    I love all things coconut. The item I probably use the most is coconut flakes. I put them in and on everything. Smoothies, nice cream, my vegan store bought coconut ice creams. I use them in energy bars and homemade granola too! Oh and in coconut yogurt! Lovvvveeee. *subscribed*

    Oh gosh, that coconut cream in the little box is so heavenly. It's basically coconut butter and I eat it right off the spoon or blend it into my matcha latte!     Ohh, dont make me choose. I love everything coconut! Coconut oil is the best for cooking & baking and I love it on toast and oatmeal. Coconut milk makes amazing custard and pudding. It turns boring curries and smoothies into creamy deliciousness. But if I had to choose it would be shredded coconut, something I always have on hand. I love making fresh coconut milk and butter.

    My most used coconut product would be coconut oil. I use coconut oil in replace of butter which I know longer buy. I even have my own DYI coconut oil body cream that I use after showering it's absolutely fantastic!

    Coconut Milk is my favourite, it's easy to find, mostly order that brand on amazon prime :) (12 at a time) I use it for my fermented yogurt, make coconut icecream, use it for whipped cream options, smoothies, & facials... and more.     It is hard for me to choose because I LOVE coconut anything! Like these squares: I would not be able to share them!! :) But I have found my chocolate cake recipe is totally transformed when I use coconut oil compared to butter or other oils.

    I love coconut butter, it works so well in vegan frosting. Also, one of my favorite cakes that I make (upside down pineapple), I have to grind large coconut flakes with flour. It makes the best tasting cake dough, with no trace of coconut (which is great because my husband isn't a fan,) and the coconut gives it such a nice texture. P.S.     I love coconut milk for curries and in smoothies or the coconut flakes for on top of smoothie bowls or desserts, ah heck I love it all lol!!!
