Raw Superfood Swirl Cheesecake Squares and a New Giveaway

Thanks everyone for entering the matcha prize pack giveaway. I always love reading your entry answers - it makes me hungry and gives me new ideas! Darylann, you're the winner, I hope you enjoy your prize! Today I have a NEW giveaway plus a fabulous recipe for superfood swirl cheesecake squares. They're raw, vegan, paleo, and gluten free - delicious too, of course... but like, really really delicious.

In this recipe I've featured products from Prairie Naturals which is a family owned Canadian company out here in British Columbia. You've probably seen their nutritional supplements and natural hair/body care products in stores across Canada - maybe you've even tried some of them. I'm a long time fan. I've been using their sublingual B12 and vitamin D drops for years, ever since my friend who manages a health food store told me that it's the best on the market. I also start every day with their "Rise and Shine" alkaline mineral drink which is designed to energize and alkalize the body. I mix it with water and add a few ice cubes. I gives me more energy and better movements (if you know what I mean lol).

Good news, I've got an awesome giveaway for an awesome Prairie Naturals bundle for one lucky winner!

Here I've used Prairie Naturals moringa powder, red superfoods blend, aqua greens, and brown rice powder to create a dessert that is PACKED with nutrition.

Here's a little breakdown of each product:

Moringa

Listen up guys, we need to be taking moringa regularly! Wherever you live in the world, I'm sure you have access to it so go out and buy some.

Moringa is a tree that grows in hot places like India, Asia, and Africa. It's also known as Drumstick Tree because of the green drumstick looking fruit that hangs from it. Both the fruit and the leaves are edible but the leaves are known as the most nutritious part, and this is what's used to make the powder that's available to us in the western world. A friend of mine from India recently told me about and showed me pictures on how they like to prepare and eat it there. It's really fascinating and I wish we could get it fresh here.

Moringa is an extremely powerful source of antioxidants, is rich in minerals, high in fiber, a good source of iron, and contains protein. It's also great for digestion, constipation, high blood pressure, is a natural diuretic, good for inflammation, it has more potassium than bananas, and the list goes on!!! I've started incorporating it regularly into my diet in smoothies or I just add it to water and drink it straight up.

Red Superfoods

This is a powder that's made up of organic fruits that are extremely rich in antioxidants, vitamins, and minerals. It's designed to boost energy and flood our bodies with nutrients that are easily assimilated by the body because in powder form and taken in a drink. It tastes delicious and it's a great thing to sip on during the day for energy instead of sugary drinks or coffee. I really taste the beets and strawberries in it.

The Red Superfoods is made up of:

Beet root: Naturally occurring nitrates in the beets turn to nitric oxide in the body, helping us relax and lower blood pressure. Beets are also good for preventing inflammation, protecting our organs, and aiding in detoxification in addition to being a good source of Vitamin C, iron, mangesium, and potasium.

Pomegranate: It contains three main kinds of antioxidant polyphenols which are said to help protect cells against cancer and aging.  Pomegranate is also great at fighting inflammation.

Goji berries: They're extremely high in antioxidants and nutrients, specifically Vitamin C. They help with fertility, aid in detoxifying the liver, stabilize the blood sugar, and promote healthy skin.

Grapeseed: This substantially increases antioxidant levels in the blood and helps with antiaging.

Carrots: These are rich in the antioxidant beta-carotene which helps to fight disease. It also helps with immunity, improves eyesight due to it's high Vitamin A content, is a great source of fiber, and helps with digestive issues.

Blueberries: The fruit with the highest level of antioxidants, they protect against cancer, urinary tract infections, and are rich in fiber, vitamins and minerals.

Strawberries: Also very high in antioxidants (second behind blueberries), they also boost the immune system, protect the eyes, and help with brain function.

Raspberries: A rich source of cancer fighting phytochemicals and are also high in vitamins and minerals, especially Vitamin A, C, E, calcium, and folic acid.

Cranberries: Most importantly known for treating urinary tract infections, cranberries also protect against cancer, stoke, and heart disease.

Aqua Greens

This powder is an equal ratio of spirulina and chlorella.

Chlorella is a fresh water micro-algae that floats on the water's surface. It soaks up the sunshine and turns it into green energy power cells! It contains the highest concentration of chlorophyll (the green pigment) of any plant on earth. It also contains high levels of protein, fiber, essential fats, complex carbohydrates, vitamins, minerals, and antioxidants. It has also been found to help remove toxins from the body, balance blood sugar, and regulate appetite.

Spirulina is a blue green algae that is rich in chlorophyll and contains 10 carotenoid pigments which act as disease preventing antioxidants. It's 70% protein (holy moly, right?!), is a great source of minerals including calcium, magnesium, and iron, and is rich in B12. It also reduces inflammation and helps to detoxify the body.

Raw Superfood Swirl Cheesecake Squares

These are SO incredibly delicious, no one will know that they're packed with nutrition! The brown rice protein in the crust is optional - you can also use any protein powder of your choice. I've also done a little something funky here by adding in some rhubarb! I thought I'd keep going with the antioxidant trend (and it boosts metabolism, aids in weight loss, and improves circulation, among other things).

Crust

3/4 cup Brazil nuts

3/4 cup shredded coconut

2 tablespoons brown rice protein powder, optional

1/2 cup raisins

2 teaspoons water

Grind the nuts, coconut, and protein powder to crumbs in a food processor. Add the raisins and process until they're broken down. Add the water (use 1 1/2 teaspoons if not using the protein), and process to combine. Press into an 8x8" pan. Set aside.

Filling

2 cups raw cashew pieces (or whole cashews)

2/3 cup chopped rhubarb

1/2 cup water

1/3 cup maple syrup

1 teaspoon pure vanilla extract

1/2 cup + 1 tablespoon melted coconut oil

--------

1 tablespoon red superfoods*

1 tablespoon moringa powder

1/4 teaspoon aqua greens*

Blend the cashews, rhubarb, water, maple, and vanilla in a high speed blender until smooth. Add the coconut oil and blend again. Separate the filling in half in 2 bowls. Whisk the red superfoods into half, and whisk the moringa and aqua greens into the other half. Pour blobs of each filling over the crust and then swirl them together with a chopstick. Place into the freezer for 4-6 hours and then into the fridge for 12 hours. Slice.

NOTE - Substitutions: I realize that many of you are around the globe and don't have access to the red superfoods or aqua greens. Substitute 1 tablespoon beet root powder or any other red super food powder of your choice, and sub spirulina or chlorella powder for the aqua greens.

Now, onto an incredible GIVEAWAY for you!

I really like the Aqua Greens. I do take them in the capsule form. I find they are the a great energy booster especially when taken over the cold winter months. I find they are a great pick me up especially working my night shifts. I'm really interested in trying the Moringa leaf powder next.

My most favourite superfood is Amla, also known as Indian Gooseberry. (phyllanthus emlica). It is the repository of Vitamin C and minerals, which is used in Aurveda for thousands of years. While in India, I take fresh Amla juice with other super foods like aloe vera juice and palm jaggery in the morning in empty stomach for best absorption of nutrients. The fruit usually is preserved by drying in sugar syrup for off seasons. While in temperate regions, I use the dried gooseberry powder mixed with hot water (like tea) and maple syrup. I am very excited to try other new superfoods here :)

I like to add boiling water to goji berries to soften them, then add to lots of stuff....salads, oatmeal, yogurt, smoothies. Always sprinkle chia and flax meal on anything. Beet root powder is a great way to sneak beets to smoothies. Lastly, hemp hearts is another way to add some healthy goodness to oatmeal and smoothies. I don't have one favourite, because I just like that I'm able to pick any of these to healthify anything. :)
