Raw Vegan Eggnog Truffles and Sharing YOUR Remakes!

Wow, 2017 is just around the corner. Can you believe it?! I hope you had a wonderful holiday season. My hubby's parents came to visit from Ontario which was nice. After growing up with white Christmas's (not just white but, like 4 feet of snow!), this is my third year of a GREEN Christmas out here on the West Coast of Canada. I LOVE a milder climate but there's something special about a snowy white Christmas that I miss.




Anyway, in my last post I shared my recipe for raw eggnog cheesecakes. They turned out so creamy, sweet, and full of flavour. I was inspired to make vegan eggnog truffles too! These could be a nice addition to your New Year's celebrations - or anytime really.

I chose to sweeten them with brown rice syrup because its a natural sweetener that is clear and I wanted to keep the truffles light in colour. You can use clear agave if you want. Use fresh nutmeg that you grate yourself, its so much tastier! If you use dried,ย  you will want to use less. Do it to taste.

Raw Vegan Eggnog Truffles

Makes 10

Truffles

2 tablespoons melted coconut butter

2 tablespoons melted coconut oil

2 tablespoons brown rice syrup*

4 teaspoons coconut flour

1/4 teaspoon each: cinnamon, fresh nutmeg, vanilla extract

4 teaspoons hot water

Whisk all ingredients, EXCEPT the water, together in a bowl set in another bowl of hot water to keep everything warm and fluid.ย  Now add the water one teaspoon at a time, whisking in between. The mixture should come together and be really smooth. If not add 1/2 - 1 teaspoon more water. Place into the fridge for at least 5 hours or until it has firmed up. Roll it into 10 balls and place in the freezer while melting the chocolate.

Chocolate

1 cup of chocolate of choice (you can keep it raw or vegan)

1 teaspoon melted coconut oil

Melt the chocolate and coconut oil. Dip each truffle into the chocolate and then set onto a parchment paper lined tray. Set in the fridge. Drizzle more chocolate across the top if desired.

*Or you can do clear agave which will make them a bit sweeter.
