Secret Ingredient Vanilla Soft Serve and 5 New Giveaways
Today I have several fun recipes to share with you along with a NEW giveaway! Congrats to Kim Copithorne who won the Koukla Delights bundle. I also have some cool news, but I'll save that for the end of the post 🙂
Have you guessed what the secret ingredient could be just by looking at the photo??? This is banana-free. I put it out on facebook to see if anyone could guess and offered a prize if someone got it right. This is a LOW SUGAR (almost sugar free) Coconut Vanilla Soft Serve and its sooo yummy! I topped it with chunks of YoFiit's new vegan protein bars and ate it for lunch today. Mmm.
The secret ingredient is cauliflower!!! It makes a great creamy consistency (think cauliflower mashed potatoes. So good right?). It needs be cooked and frozen first though.
I've sweetened up the soft serve with lucuma powder. It's a Peruvian fruit that tastes like caramel and can be found it in dried powdered form here in North America. Its really high in vitamins and minerals. I've also added a touch of stevia to boost the sweetness. Overall its very low on the sweet scale - much less sweet than a banana based soft serve which is nice and which is why I enjoyed it for lunch.
Vegan Vanilla Coconut Soft Serve
1 1/2 cups chilled full fat coconut milk
1 1/2 cups cooked/frozen cauliflower
2 tablespoons lucuma powder
1 teaspoon vanilla extract
4 large ice cubes
5-6 drops stevia
1/8-1/4 teaspoon vanilla bean powder, optional
Blend all ingredients until smooth and creamy in a high speed blender. Eat immediately.
I made the drizzle by whisking together some tahini, cinnamon, molasses, and touch of coconut oil. I mainly did this for a nice pop of colour and it added some extra richness. And as I mentioned above, I topped mine with chopped protein bars from YoFiit ...

An Apple Cinnamon fiber bar for the morning which has 12 grams of fiber in it! This is my favourite bar of the three, hands down (Jesse loves it too). It's a touch sweeter than the others, has a great chewy texture, and is bursting with flavor.
The Goji Chocolate energy bar is for midday. I think this one would be even better dipped in chocolate (haha you know how I love to dip things in chocolate!). It has a slightly soft, chewy texture which I love, but I'd like it to be a bit sweeter.
The Lemon Coconut protein bar is for any time of the day. It packs 15 grams of protein in just one bar! This one is my least favourite. The flavor isn't quite my jam and I think it needs to be sweeter - BUT then again they've designed it to have minimal sweetness on purpose so I have to remind myself that its a nutritional bar not dessert.

Be sure to give the soft serve a try...
and you don't even have to tell your family that there's cauliflower in it hehe. Ultimately you can use any sweetener that you want in it. If you don't have lucuma, no worries! You can use maple syrup, a few dates, or coconut nectar.

I've just started filming for my online raw food "cooking" course! I'm so excited! NO DESSERTS. This will be focused on savory meals only. I should have done something like this years ago - but better late than never right?! I have shared a lot in my instastories so be sure to check it out. We'll be doing more filming next week. And I mean professional filming, not like my little Youtube videos that I do myself lol. I asked my Facebook friends for suggestions on what to call the course. I cant call it Sweetly Raw since I won't be making desserts (although I may add a dessert course in the future). People had soooo many cool ideas! It's too bad that I only need one title.
