Sweetly Raw – One Bowl Chocolate Chip Cookies (Vegan/GF)

Who wants a cookie?! There's nothing quite like a freshly baked chocolate chip cookie, am I right? Even better when it's delicious AND healthy. This is my all time favourite cookie and I don't want to admit how many of them I can eat.

This easy recipe can be whipped up in just minutes and only requires one bowl. It sure makes for quick and easy clean up. The cookies are vegan, gluten free, and refined sugar free. Oh and they freeze well!


In this post you'll see different batches which is why they all look a touch different. How long you bake them and what size and thickness will all result in a different look .

You can make small cookies using a mini ice cream scoop (as I have above)....

... or large ones using a large scoop (as you see below).

The cookies have such a lovely soft, slightly chewy texture but with a bit of crispiness from the almond flour, especially if you let them get more toasty in the oven (not the difference in colour between my mini cookies and the large ones).

Chocolate Chip Cookies

Vegan - Gluten Free - Refined Sugar Free

1 1/2 cups blanched almond flour
1/2 cup oat flour*
1/2 cup tapioca or rice flour
1/2 teaspoon baking soda
1/4 teaspoon himalayan salt
1/3-1/2 cup agave or maple syrup
1/2 cup melted coconut oil or avocado oil**
1/2 teaspoon vanilla extract
1 cup dark chocolate chips

In a bowl, stir together the almond, oat, and tapioca or rice flours, baking soda, and salt. Add the sweetener, oil, and vanilla. Stir everything together until evenly combined. Stir in the chocolate chips.
Use an ice cream scoop of choice and release each ball of dough onto a greased cookie sheet (or ungreased silpat, or parchment paper). Press down gently on each cookie or leave as-is. Bake at 350F for 6-8 minutes (mini ice cream scoop) OR 10-12 minutes (large scoop), or until golden brown around the edges.

*I make my own oat flour and finely grinding oats in my blender.

**Coconut oil will yield a thicker cookie as where the avocado oil will make the cookies spread a bit more making them a bit thinner.
