Sweetly Raw – Pumpkin Spice Granola (V/GF/Nut Free)

The pumpkin kick is still in full swing... I've been making batch after batch of pumpkin muffins (they'll be in another post soon for you), but today I have an EASY, ultra crunchy Pumpkin Spice Granola recipe for you that is vegan, gluten free and nut free. I enjoy the occasional bowl of granola with homemade almond milk but I really love topping my smoothies and puddings with granola on the reg. I'm big on textures, so I need something crunchy with my creamy. Ya feel me?

I actually shared this recipe on the blog three or four years ago but I made a few tweaks and re-shot the photos for a fresh new post! It's crazzzzy easy to make and stores well in a sealed container for up to two months.

Notes:

I've made this a nut-free recipe but you can add some chopped or whole nuts which would be nice, especially pecans.

I like the textural difference between both the shredded coconut and coconut flakes. You can choose to use one or the other.

I used pumpkin pie spice in here which is a blend of cinnamon, ginger, nutmeg, allspice, and cloves. If you don't have it, you can just use 2 teaspoons of cinnamon and 1/2 teaspoon dried ginger.

Use sea salt or himalayan salt - the salt brings out all the flavours and adds minerals, so don't skip it!

You can use either small or large flake oats in the recipe.

Pumpkin Spice Granola

2 cups oats

1/2 cup pumpkin seeds

1/2 cup shredded coconut

1/2 cup coconut flakes

2 1/2 teaspoons pumpkin pie spice

Scant 1/4 teaspoon salt

1/4 cup pumpkin puree

3 tablespoons maple syrup

3 tablespoons melted coconut oil

2 tablespoons coconut sugar

Stir the first 6 ingredients together in a mixing bowl. Whisk the pumpkin puree, syrup, oil, and coconut sugar together in a bowl. Add the wet mixture to the dry and mix until everything is coated. Spread onto one very large or two small parchment paper lined baking sheets. Bake at 300F for 35-40 minutes depending on how toasty you want it. (Check after 35 - it will be fragrant and golden in colour).
