Sweetly Raw – Pumpkin Spice Shake + 10 Pumpkin Recipes
It's my first Fall post of the season! How crazy is that? It's already the end of September. Tis' the season for all things pumpkin spice and everything nice, am I right? Today's recipe is a winner. It's EASY to whip up and it's so healthy that you can eat it for breakfast or enjoy it for dessert.

A thick creamy pumpkin shake with caramel sauce and coconut whipped cream on top. Does it get any better?!
You'll notice that you can use either coconut water or almond milk. I used the water to boost the nutrition of the shake AND sweetness so that I could use less dates. Make sure to use the full fat coconut milk to give it that richness that it needs, especially since you'll be adding ice.
No fresh ginger on hand? No problem, use 1/8-1/4 teaspoon dried ginger powder.
Vegan Pumpkin Spice Shake
3/4 cup full fat coconut milk
1/2 cup pumpkin puree
1/2 cup coconut water* OR almond milk
1 1/2 teaspoons cinnamon
2-3 teaspoons chopped fresh ginger
1 heaping cup ice cubes (7-8 large)
Blend all BUT the ice cubes until smooth and creamy in a blender. Add the ice and blend again until completely smooth. Drink immediately!
*I use unpasteurized coconut water that has been frozen. It naturally tastes very SWEET and contains all of its nutrition unlike the kind you buy at the store that comes in a can on the shelf or even the refrigerated kind. Try buying the frozen stuff if you want all the benefits that coconut water offers. The taste alone is night and day.

Coconut Whipped Cream
Chill a can of full fat coconut milk in the fridge overnight. Open it and drain off the liquid. Whip (using beaters) the thick creamy part that has separated from the liquid. Optional: Add 1-2 teaspoons maple syrup.
