Sweetly Raw – Snickers Balls & Cinnamon Almond Butter (Vegan)

Vegan snickers balls

Who's knee deep in all things festive right now?! Two years ago I made these snickers balls but never actually wrote down my recipe - until now! When I posted the photo on instagram, I had so many people requesting the recipe that I decided to re-create them so that I could jot down my measurements.  I also have a wonderful and easy recipe for cinnamon almond coconut butter, raw vegan sugar cookies, and healthy holiday drinks!

These balls are a peanut and chocolate lovers dream.

Creamy peanut butter caramel with crunchy peanuts, either drizzled with or dipped in dark chocolate. Just a warning though - they're slightly addictive 😉

Vegan Snickers Balls

1/3 cup peanut butter

1/3 cup pitted packed dates (or 70g date paste)

3 1/2 tablespoons almond flour

2 tablespoons maple syrup

2 tablespoons warm water

1 tablespoon coconut oil

1/2 teaspoon vanilla extract

1/4 teaspoon pink salt

1 cup roasted peanuts

Combine all BUT the peanuts in a food processor until smooth. Add the peanuts and pulse several times until the peanuts are chopped and combined with the caramel (make sure the peanuts stay chunky) . Roll the  mixture into 18-20 balls and transfer them to the freezer while melting the chocolate - OR roll them into some extra chopped peanuts before freezing. 

Chocolate Dipping

1 heaping cup dark chocolate chips

1/2 teaspoon coconut oil

Place ingredients in a bowl set over a pot of hot water on the low heat on the stove. Gently melt the chocolate. Dip each ball into the chocolate and transfer it onto a parchment paper lined tray - or just drizzle the chocolate over the balls. Sprinkle extra peanuts on top if desired.

How about some homemade nut butter?! Its actually easy to make your own - you just need a food processor OR a high speed blender.

I've left it unsweetened but you can add a few tablespoons of coconut sugar.  This cinnamon almond butter uses only a few ingredients - you can even turn it into a decadent chocolate spread with the addition of cacao powder and sweetener.

Cinnamon Almond Butter

3 cups roasted or raw almonds

1 cup toasted or raw coconut flakes

2-3 tablespoons coconut sugar, optional

1 tablespoon coconut or avocado oil

1-2 teaspoons cinnamon

1/4 teaspoon pink salt

Blend all ingredients in a high speed blender or food processor until smooth, scraping down the sides along the way. In the processor it will take up to 15 minutes (keep going, it'll blend). Roasted almonds will blend more easily/smoothly than raw.
