Sweetly Raw – Vegan Holiday Truffles! Red Velvet, Eggnog, Peanut Butter, and More

It's December and that means its officially the holiday season, right?! Helllllo treats!

Today I'm sharing truffle recipes that are vegan, gluten free, and some of them are nut free too.

You have to try my 4 ingredient red velvet truffles that are so decadent and delicious.

They're vegan, gluten free, nut free. You can roll them in shredded coconut tossed with beet root powder for some colour OR you can choose to dip them in dark chocolate - or both as I've done.

Red Velvet Truffles

Makes 24-28

Ganache

1/2 cup full fat coconut milk

1/2 cup cooked, diced beets

9 oz melted dark chocolate

4 tablespoons powdered xylitol or coconut sugar

Blend the milk, beets, melted chocolate, and xylitol in a blender until completely smooth. Pour into a large bowl and let chill in the fridge for at least 12 hours, until the ganache firms up. Use a mini ice cream scoop or spoon to portion and roll into ball. Chill in the freezer for at least 4 hours to harden before dipping into chocolate OR immediately roll into the coconut and then place them into the fridge to firm up (it'll soften quickly as you roll in your warm hands so work fast).

Coating

1 cup dark chocolate (chips or chopped bar)

Beet powder for dusting on top, optional

Shredded coconut for rolling, optional

Slowly melt the chocolate in a bowl set over a pot of hot water on low heat on the stove. Dip each ball into the chocolate and use a fork to transfer it into a parchment paper lined tray. Sprinkle with xylitol and beet powder. Place into the fridge to harden. Store these in the fridge for up to 7 days or freezer for 8 weeks.
