Vegan Apple Nachos, Blueberry Granola Parfaits, GIVEAWAY
Did you know that its National Nutrition Month? Yup, so lets get chomping on all the nutritious foods. I actually have 3 new recipes to share with you today - my title would have been too long if I included the third one though! First up, quick and EASY Vegan Apple Nachos, then Blueberry Granola Parfaits, Apple Granola Donuts, and a fabulous new giveaway!
In my new recipe video HERE I show you how easy it is to make healthy apple nachos. They great snack for kids of any age (meaning adults too lol). You can double the peanut butter sauce and chocolate sauce and keep them in the fridge for even easier nacho assembly. You can also use whatever toppings you like, in place of what I've used.

I've teamed up with Singing Bowl Granola to bring you today's giveaway. Yes, one of my lucky readers will get to choose TWO bags of their tasty granola! (scroll down to enter).
Singing Bowl is a local company here in Victoria, BC that makes organic, artisan granola and porridges. I first met them at one of the farmers markets where our booths were beside each other. I've gotten to know the owners, Jessica and Gavin and I can say first hand that they put their whole hearts and souls into producing all their products. Note that these granolas DO contain honey, so they're not vegan. They're sweetened with both maple syrup and honey.
What I like about these granolas is that they're not too sweet. I mean, don't get me wrong, you know how much I love desserts lol, but in order to enjoy granola for breakfast, I think it should be minimally sweet.
I used the Morning Chorus granola to make these tasty Blueberry Granola Parfaits. It's filled with dried apricots, raisins, almonds, shredded coconut, cashews, sunflower seeds, flax seeds, pumpkin seeds, and dried cranberries.
The parfaits are really delicious incredibly easy to make. They could be enjoyed for breakfast, a snack, or even dessert. As a child I loved granola with yogurt (rather than milk) for breakfast, so here I created a raw blueberry cream which is similar to yogurt and layered it with the granola and fresh orange.
Blueberry Granola Parfaits
2 cups blueberries*
1 1/4 cups cashews
2-3 tablespoons lemon juice
2 tablespoons maple syrup
2 tablespoons water
Blend all ingredients until smooth and creamy in a blender. Note: If you are going to chill the cream for more than 6 hours before using it, add another 1 tablespoon of water, as it does thicken slightly when chilled.
*Use Fresh OR use frozen and thawed (measure before thawing)
1 Batch blueberry cream
1 1/2 cups granola of choice
1 large diced orange - or fruit of choice
I used the Mega Medley granola to create Apple Donuts!
This granola is a mix of oats, honey, coconut oil, coconut, sunflower seeds, sesame seeds, pumpkin seeds, hemp seeds, chia seeds, and flax seeds.
Here I simple cored and sliced the apple, then I spread peanut butter on both sides and dipped it in the granola! (well, I dipped but also had to press the granola on). This is a fun and somewhat messy snack. I guess we're having an apple theme here today! This would be a fun one to make with kids.
