Vegan Peanut Butter and Jelly Smoothies and Raspberry Hibiscus Pudding

Hi everyone! Today I have 2 amazing new vegan recipes to share with you...

Peanut butter and jelly sandwiches were my favourite as a child - as were peanut butter and banana!!! Ooh that was an extra special lunch treat. I have to hand it to my mom because she always bought whole grain bread, natural peanut butter and sugar free jam. Go mom! While I don't eat bread anymore, my love for the fillings inspired me to turn it into a smoothie!

Oh my goodness, words cannot express just how incredible this smoothie is. You're just going to have to make it and experience it for yourself. The recipe is in my Sweetly Raw Desserts book (available wherever books are sold), but I've created a recipe video on my You Tube Channel to show you how easy it is to make this tasty drink - and also how to make it look beautiful because lets face it, we eat with our eyes first. Our food has to look appealing right?!

Have a peanut allergy? You can try it with almond or cashew butter.

This would be a fun one to make with kids too. They can help prep the ingredients and then decorate it however they want.

It can be enjoyed for breakfast, lunch, a snack, or dessert. Mmmm.

Now onto something super fruity! This Raspberry Hibiscus Chia Pudding is delightfully light and packed with flavour. Its made with hibiscus tea. Have you ever had hibiscus tea? It's a tropical flower that has many benefits including:

  • lowers high blood pressure
  • decreases inflammation
  • acts as a natural diuretic
  • aids in digestion
  • relieves menstrual pain
  • boosts metabolism and help with weight loss

Not a bad list eh? And it tastes great too! I drink it plain, but sometimes I add a little sweetener and I find that really brings out the flavour even more. It has a tangy flavour, almost like cranberry.

Raspberry Hibiscus Chia Pudding

1 1/2 cups boiling water
2 Tbs hibiscus flowers*
1 1/2 cups raspberries
2-3 medjool dates
1/3 cup cashews
1 tsp lemon juice
1/4 cup chia seeds
5 drops stevia

Steep the flowers/petals in the boiling water for at least 30 mins. Let the tea cool and the. Blend with everything except chia and stevia until smooth in a blender. Whisk in the chia, ass stevia to taste. Let thicken for at least 2 hours.

*Note: You can also use hibiscus tea bags and steep it that way. Try using 2 bags: 1 1/2 cups water.

This morning I got creative with my smoothie! Normally in the winter months I eat a warm breakfast but today I was in the mood for a Blueberry Smoothie Bowl. I had this vision as I went to sleep last night and had to make it happen 😀 Speaking of smoothie bowls, have you checked out my recipe video for Acai Smoothie Bowls?! They're soooo tasty!

It was very simple. Here's how I made this blueberry smoothie bowl:

I blended full fat coconut milk with frozen blueberries, a few ice cubes, and a big spoonful of avocado (no sweetener or anything but you could add a few dates or stevia, or any other sweetener of choice).

It was thick and creamy. I poured it into the bowl and then made the 3 circles of blueberry sauce with a squirt bottle. I did the same with strawberry sauce (strawberry sauce recipe from the Peanut Butter and Jelly Smoothie recipe that I shared above) and mixed in some coconut milk to make it light pink/creamy. I used a chopstick to create the spider web effect! You just start at the middle of the circle and move it out to the edges. Garnished with frozen blueberries and voila!

For the one below here, I simply added blobs of plain chia pudding (homemade almond milk mixed with chia) and swirled it around. Easy peasy right?!
