Vegan Peanut Butter Ice Cream

It's time to kick off the Vegan Ice Cream Challenge with a recipe! Are you getting creative in your kitchen yet?

I came up with this recipe last week and it turned out to be a big hit for J and I. If you're a peanut butter lover like me, you'll enjoy this too. You can make it raw with wild jungle peanut butter or the roasted version. Naturally I had to dress it up with goodies like my favourite chocolate sauce, chopped peanuts both - both folded into the ice cream.

Vegan Peanut Butter Ice Cream

1 can full fat coconut milk
1/2 cup water
1/4 cup peanut butter
1/4 cup maple syrup
1/2 teaspoon pure vanilla extract
1/4 teaspoon xanthan gum*
--------
Handful chopped peanuts

Blend all ingredients until smooth and creamy.
Chill in the fridge for a few hours.
Process in an ice cream maker according to the manufacturers instructions.
Fold in a handful of chopped peanuts.
Eat immediately (will be like soft serve) or transfer to a bowl and freeze for a few hours before eating.

*This helps to thicken. You can use guar gum instead.

Instead of a cherry, I added a vegan chocolate chip cookie on top!

    Looks fantastic, Heather! I am going to make that this weekend! When I was a teenager, I loved toppings, almost more than the ice cream itself. If my ice cream was a sorbet or an icy of some kind, it had to be gummi bears! But if it was chocolate or vanilla or prailine, it had to be lots of different textures: hot fudge, peanuts and some kind of crunch cookie and sprinkles! YUM!! :-)

    Oh this looks dangerous, especially that cookie on top! Who would want a cherry when you could have a cookie?

    Yum yum yum! I have been craving peanut butter all day, but sans ice cream maker my smoothies will have to suffice :) Great blog, looking forward to reading more!!

    Thanks Michele! Awesome,let me know how your family likes it. I can relate - I love toppings too! You know what? I tried gummy bears on my ice cream when I was a kid. Everyone thought I was crazy, lol. <br /><br />Gabby - Exactly!!! I'll take a cookie over a cherry any day. <br /><br />Thanks Kassandra. You can make the ice cream without a maker. Use ice in place of the water and then transfer to a bowl and freeze for a few hours, stirring periodically.

    Heather, I love peanut butter and I want that sundae in my mouth. Fresh blackberry sauce would be amazing on it. Like a peanut butter & jelly sandwich :)
