Vegan Pumpkin Pie Parfaits, Youtube & Apple Protein Shakes
Today I have several things to share with you. I've been getting creative in my kitchen playing with the tasty flavours of Fall. I really needed this after working around the clock all summer and planning a wedding. Don't get me wrong, I'm grateful to have my own business but you know what its like if you're in the same boat, especially if you're in the food business. Pumping out dessert after dessert meant putting my creativity aside for a bit. I ended up making some changes in the past month so that I have more balance in my life again.
That brings me to today's recipes! Vegan Pumpkin Pie Parfaits, Caramel Apple Cinnamon Protein Shake, and Caramel Apple Cheesecake. These recipes all have something in common… they've been turned into videos. Yup, I started a YouTube channel where I'm going to be sharing healthy recipe videos on a regular basis. And not just desserts. I'll be featuring meals, desserts, drinks, snacks, you name it. Maybe even some other things that I've been thinking about like: how to find/live your passion, how to get your book published, etc… ideas are floating around in my mind. And finally, this sugar free Vegan Caramel Apple Cinnamon Protein Shake is a great way to get more protein into your life along with those tasty apples that are falling off the trees right now. In fact Jesse's customer has apples falling off his trees like crazy so has given us bags of apples. A batch of apple butter is next on my list…
Vegan Caramel Apple Cinnamon Protein Shake
1 1/2 cups peeled, diced and frozen apples*
3/4 cup canned full fat coconut milk
3 tablespoons vanilla protein powder of choice
3 large ice cubes
1 1/4 teaspoon cinnamon
1-2 drops stevia
Blend all until smooth! Serves one.
*You can totally leave the peel if you have a high speed blender and it won't change the texture but it will change the colour.
Optional: Caramel Sauce
2 tablespoons coconut nectar or maple syrup
1 1/2 tablespoons sunflower seed butter (or almond butter)
1/2 - 1 teaspoon water (or to thin as you like)
Whisk all ingredients together. This will give way more than you need to drizzle on the inside of the glass. Use as a dip for apples.
