Cauliflower Hummus & What I Eat In A Day

Hummus lovers! I have an awesome variation for you. My cauliflower hummus recipe is ultra creamy and is bean-free. It's vegan, paleo, and keto. It's great with veggies, crackers, in wraps, and as a creamy pasta sauce. I can't wait for you to try it.

I've been on a keto diet for 5 weeks now. Wow, crazy how time flies! It has done wonders for my gut - bloating, pains, and gas are gone. Sugar cravings are gone too, and I'm excited to share "What I eat in a day" with you.

NO peanut butter, smoothie bowls, banana nice cream, and yams - some of the staples in my life - and I only realized yesterday that it's been weeks since I've had them.

I've created some amazing sugar free treats along the way though and I'm even working on a sugar-free/keto treat e-book.

Now back to that creamy cauliflower hummus that you need to try. Here's the recipe. Dare I tell you that its so good that I can eat it with a spoon?!

Cauliflower Hummus

2 cups packed, cooked cauliflower*

1/4 cup tahini

2 1/2 tablespoons lemon juice

2 tablespoons olive oil

1/2 teaspoon salt

1 clove garlic

Cumin, to taste

Blend all ingredients until smooth and creamy in a high speed blender. Keep in the fridge for up to 6 days.

*Boil or steak roughly chopped cauliflower until soft.
