Dinner By The Lake

I had fun making dinner for a few friends the other day. It was so gorgeous outside that afternoon I thought "why not move my kitchie to the dock?!" I brought some of my ingredients, cutting board, knife, and spiral slicer down to the lake and set up shop!
Zucchini and carrot for noodles, parsnips for rice, cucumber and red pepper for nori rolls.

On the menu: Appetizer of Nori Rolls: Parsnip/macadamia rice, carrot, avocado, red pepper, and cucumber, with tamari for dipping.
Main course of Pad Thai from Russell James' new No Dehydrator Recipes ebook. Zucchini and carrot noodles with red cabbage, cuke, red bell pepper, cilantro, mint, and basil in a delicious, slightly spicy sauce.
Chocolate Berry Parfaits - chocolate avocado pudding, blueberry pudding, raspberry pudding, layered with blueberries, goji berries, and coconut.

    WOW! This meal looks PERFECT! The gorgeous setting just adds to the beauty of your food. I looove sushi so much and those parfaits are just stunning.

    That was a feast! Suggestion: I recently tried kelp noodles, Absolutely delicious. You don't need a spiralizer, Just open the package, rinse or soak, then enjoy.

    What a gorg feast you've got! I swear I have become the huge-est spiralizing diva lately...I just posted another pic w/ spiralized zuke noods on my blog 5 mins ago. We'd make great friends with our spiralized food :) Lookin' so good over on your spread of eats!

    Oh you really love functional foods, hahaha. I noticed that you used maca powder, goji berries cashews and more. you might want to share your recipes with me. I love it! Perfect meals for the whole family. i think i need to order more from hidalgofoods.

    Everything looks gorgeous, especially those parfaits. They are so vibrant and beautiful in color! I have that same spiralizer :)
