Raw Banana Bread Bars
Now, lucuma and vanilla bean powder are already two of my favourite dessert ingredients, but banana powder!!!! This was intriguing and exciting! I HAD to find a cool way to use it...
I had very ripe bananas sitting on my counter... so raw banana bread bars were born. These bars are moist and sweet with a silky frosting and a definite banana taste. Yumm!
Banana powder smells like the most heavenly thing... well, like dried bananas, lol. But seriously it smells divine. I included it in both the bar base and the frosting for an extra kick in addition to the fresh bananas.
Banana Bread Bars with Banana Frosting
Grind the almonds into flour in a food processor.
Add all remaining ingredients and grind until the dates are broken down.
Make sure the mixture holds together when pressed in your hand, otherwise add a touch more water.
Press into the bottom of an 8x8" pan.
1 cup mashed banana
2 teaspoons maple syrup
2 tablespoons banana powder
2 tablespoons lucuma powder
1/2 teaspoon pure vanilla extract
1/2 teaspoon lemon juice
Few pinches turmeric for colour, optional
8 tablespoons melted coconut oil
Blend all but the coconut oil in a blender until smooth.
Add the oil and blend to incorporate.
Spread the frosting over the bars. Sprinkle chopped pecans on top (optional).
Chill for at least 4 hours, or until the frosting is set.
Slice into bars.
