Raw Cream of Pea Soup
Recently I had the pleasure of browsing through Tanya Alekseeva's Festive - The Best Raw Food Christmas Recipes ebook. Now, obviously it's January and the holidays are over, BUT the recipe in this ebook can be enjoyed any time of the year for special occasions, and even some on a regular basis. For example, I made Tanya's delicious raw Cream of Pea Soup. I don't often eat peas but the recipe really jumped out at me. It looked so green and creamy, and refreshing. Let me tell you… it was better than I hoped it would be! The flavour of the peas shines through and the soup is creamy and comforting which is perfect for these chilly winter days.

Raw Cream of Pea Soup
1 1/2 cups water
1 cup fresh peas
1/3 cup cashew cream
1 celery stalk chopped
5 pitted dates
1/2 avocado
2 tablespoons lemon juice
1 clove garlic
small handful parsley
1 teaspoon fresh thyme
salt and pepper, to taste
optional: peas, black pepper, and parsley to garnish
Put all ingredients into a blender and blend until smooth and creamy.
Garnish and serve immediately.
Tip: keep in the fridge. Stir in some boiling water before serving.
