Raw Power Bars

A few weeks ago I made some power packed raw food bars. These gems are packed with nutrition, delicious, and hearty. There's not too much else to say! I'll let this simple recipe do the work.

Power Bars

These are easy energy bars to throw together in a food processor. I added a pinch of vanilla bean powder to kick up the flavour. You could try using goji berries in place of the mulberries as a colourful substitution!

1/2 cup almonds
1/3 cup pumpkin seeds
1/3 cup shredded coconut
1/3 cup pitted packed dates, chopped
1/4 cup hemp seeds
3 tablespoons mulberries
1 1/2 tablespoons lucuma powder
2-3 tablespoons cacao nibs
1/2 teaspoon pure vanilla extract
2-3 teaspoons water, as needed

Grind the almonds and coconut into flour in a food processor along with a pinch of salt.
Add the seeds, dates, and lucuma. Process into a dough.
Add the hemp seeds, cacao nibs, vanilla, and 2 teaspoons water. Pulse to combine.
Press the dough making sure it holds together well. Add a bit more water only if necessary.
Firmly press the dough into an 8x8" pan for a thin layer of bars. I pressed the dough into 3/4 of the pan to make the bars slightly thicker.
