Raw Strawberry Macaroons
I've never been a fan of regular macaroons. In terms of a cookie, almost anything else would be my first choice. I do, however, love raw macaroons!! I've only ever made and eaten regular coconut and chocolate macaroons so I thought it would be nice to make a new version. Here's a yummy and easy recipe for raw coconut macaroons infused with strawberries - and they don't require any dehydration. Yay! It's as easy as blending ingredients in a food processor, forming cookies with a mini ice cream scoop, and popping them into the fridge or freezer to chill and set.

For an even more decadent version, try dipping them into raw dark chocolate….
Or dip just the bottoms into melted dark chocolate.
The beetroot powder is optional but it definitely adds a nice shade of pink that the small amount of strawberries along can't do. I highly recommend the natural organic flavourings from Medicine Flower Essences but if you don't feel inclined to go that route, try a natural strawberry extract from a health food store.
Raw Strawberry Macaroons
1/3 cup cashews or almonds
3/4 cup shredded coconut
1/4 cup diced strawberries
2 tablespoons maple syrup or agave
2 1/2 tablespoons coconut flour
12 drops strawberry medicine flower extract
1/2 teaspoon pure vanilla extract
2 tablespoons melted coconut oil
2-4 drops stevia
Optional: beet root powder for colour
Grind the almonds or cashews to flour in a food processor. Add all remaining ingredients and process until the mixture is combined. Use a mini ice cream scoop to form balls and release them onto a parchment lined cookie sheet. Pop them into the fridge or freezer until firm.

You have a gift! That platter of chocolates alone is tempting. I can't believe all your recipes are raw. I have only been following a raw diet for a few months and not every day as of yet. I struggle greatly finding things to eat, but clearly I don't have your imagination. Your blog is going to be my savour when it comes to sweet things. Wow Heather these look amazing - I must be telepathically channelling you as about 1 week or so ago i had some fresh strawberries and kept imagining Strawberry Macroons - semi dehydrated - as i had been playing with Pear ones a few weeks before - So i made a similar recipe to yours (not realising you had also) i think it is nut free and then i drizzled with a rose hip rapadura glaze and yes - drizzled also in fresh homemake rose chocolate - :) i use a lot of ground dried rose petals - it's an acquired taste for some but i love it!
