Raw Vegan Chocolate Protein Tarts & GIVEAWAY
Who's interested in a creamy raw vegan no-bake gluten free chocolate protein tart? That's a mouthful, eh? I'm so excited to share today's recipe with you along another awesome giveaway that is open to Canada and the USA!
These tarts are deceiving - they look rich and decadent, like something you'd only eat for dessert BUT you could eat these for breakfast or enjoy half of a tart for a snack. They're low in sugar and are filled with plant protein.
Earlier this year I was in Kelowna, BC to teach a raw food class and visit one of my best friends. When she took me to her favourite health food store, I discovered a new line of vegan energy bars from a company called PowerPlant (which is located in Kelowna). I bought the Chocolate Veggie Bar and LOVED it! I was impressed with everything from the ingredients to the flavour and the texture. It was semi-soft and chewy, not too sweet, chocolatey, and satisfying. I'm picky when it comes to bars. I don't want anything that's full of soy, whey, sugar, or unhealthy oil (there are way too many of those on the market). I'm typically not a fan of brown rice protein based bars either as I don't like the texture and don't digest them very well. I made sure to pick up some more bars before leaving the city as I wasn't sure where else I could find them... Fast forward a few months. I was excited to see the PowerPlant bars and protein powder in my local health food store! I had to contact the company about doing a giveaway for you because I really like to spread the word about a good product when I see it.
It just so happened that Martin, the owner, was here in Victoria for business recently so I had the chance to meet up with him and learn more about what he's doing. I used both the bars and the protein powder to create these rich, yet healthy chocolate tarts! I used the "bare" bars (the ones without any chocolate covering) to create the crust, and used the berry protein powder to create the creamy filling.
Raw Vegan Chocolate Protein Tarts
Makes 3
Crust
4 PowerPlant "bare" bars*
1/2 tablespoon water
Break or chop the bars into pieces and add to a food processor along with the water. Grind to fine, moist crumbs. Press into the bottom/sides of 3, 4" tart pans with removable bottoms. Set aside.

Filling
1 cup raw cashew pieces
1/2 cup water
1/4 cup PowerPlant protein powder*
2 tablespoons coconut nectar
2 tablespoons cacao powder
1/2 teaspoon pure vanilla extract
3 tablespoons melted coconut oil
Blend the cashews and water until smooth in a high speed blender. Add the remaining ingredients and blend until smooth. Taste. Add 1-2 drops of stevia if desired. Pour into the crusts (you'll have a bit left over to eat). Place into the freezer for at least 4 hours. Push the tarts out of the pans (wiggle a butter knife between the ring and the plate in the bottom).
*Or protein powder of your choice, however since this one is unsweetened so you may want to omit the sweetener entirely if your protein is sweetened.

I love using protein powder in so many things! I love to add a chocolate protein powder to a chocolate banana ice cream, as well as make my own versions of protein bars with tahini, coconut flour, matcha, turmeric and a vanilla protein powder. I like to keep these in the freezer and either break up onto smoothie bowls or cover in melted chocolate for a dessert! So many fun things!
