Sweet Tooth: Jackfruit Shake
Happy Friday All! I hope you had a marvelous week! Any big plans for the weekend?
Today I've got a fun shake to share, featuring a fruit you've heard me talk about before: jackfruit (ice cream, and pudding)!
This drink is frosty and sweet - perfect on a hot summer's day. Taste the soak liquid on it's own, it's insanely yummy! I've also tried it as a green smoothie by adding a huge handful of spinach. Yum!
Ingredients:
1/2 cup soaked, dried jackfruit
(soak it in water for 6-12 hours)
3/4 cup soak liquid*
1/2 large frozen banana
1/3 cup diced frozen mango
1/2-1 cup ice cubes
Stevia, to taste (if needed)
Blend all ingredients until smooth.
Flash back... a bit of chocolate and mint in this tart from a dessert post last August.

OOMMMGGG! That looks YUMMY! I've heard OF the Jackfruit but I have never ever tried it!! I know that it's a member of the cactus family... and it's in a Disney ride at Epcot. :o) That's where my knowledge stops hehehe.

Mint tart looks heavenly! We love mint and chocolate!!! Never had jackfruit, guess we are going to have to try one day. Looks good

At the farmer's market by me there's a couple that sells all sorts of raw goodies and superfoods. They have jackfruit and I sampled it once. It is SO good!! I will have to try that smoothie. :)
For those of us who don't have access to fresh jackfruit (ive only had it fresh in Australia), you can find the dried stuff from vivapura (they should start paying me for all this advertising, dontchya think? :)

Mmmm, I can hardly wait to try some jackfruit. Like Bitt already said, I haven't had any luck finding it in Seattle. Hopefully I can travel to a warm place soon and have some :)

I just made a similar shake this morning. So refreshing and yum especially in the heat! Oh and your pie combines my two favourite flavours. YUM!

I really want to try jackfruit. Where do you buy it? The mint dessert looks great. I posted today about your mango tart that I made... It was really good. I used apricots because I didn't have raspberries, I'll try it with the raspberries next time.

I love your recipes and your stories...I've been dying to make something with the fresh mint in my garden and this might it!<br /><br />However, even before you posted this, I had been thinking it might be fun to make a raw version of the popular "Ovation" mint stick. Do you know what that is?<br /><br />This recipe seems like a bit of overkill for something that is going to be just a tiny little stick. Do you have any suggestions for what I could use to create that? Specifically the minty middle part. I'd love to hear your ideas. Thanks!

How much fruit would you use if using fresh instead of dry?
My neighbor gifted me two jackfruit so we are having smoothies like crazy. Today was good - a fistful of jackfruit, papaya, a bit of watermelon that needed to get eaten, coconut milk, yakult for the pro-biotic, and some cinnamon. Oooooh. It was so nice. And it kept us happy for hours. Thanks for all your great ideas.
