Sweetly Raw – 3 Snack Recipes + New Yoga Videos
Who else loves to snack?! Well I certainly do. I could snack all day long lol. Today I'm sharing 3 fun vegan and gluten free snack recipes that I hope you like as much as I do.
Chocolate covered rice cakes (2 ways), 1 ingredient baked crackers with avocado, tomato and hemp seeds, and chocolate almond butter stuffed dates that can be whipped up in just a few minutes!
Big surprise, the chocolate covered rice cakes are my favourite of them all and people have already been making them on Instagram. I love seeing remakes!

Chocolate Covered Rice Cakes
Make the coconut version or the peanut butter version, or both!
3-4 Rice cakes (or thins which is what I used)
1 cup dark chocolate
2 tablespoons melted coconut butter
Melt the chocolate in a heatproof bowl set over a pot of hot water (don't let it touch the water). Dip each rice cake into the chocolate and place it on a parchment paper lined tray. Place into the fridge to harden. Drizzle each one with melted coconut butter and sprinkle with coconut flakes and goji berries. OR drizzle with peanut butter and more melted chocolate. Pop back into the fridge to harden.
Note: you need more chocolate than required for the rice cakes because you need a sufficient amount to cover them when you dip them.
One Ingredient Baked Crackers
I like to snack on these in the afternoon when I want something savory. You can use sprouted grain tortillas or brown rice tortillas. You can use cilantro or any other fresh herb of your choice.
All natural sprouted grain or brown rice wraps (cut into shape/size of choice)
Avocado, sliced or mashed
Tomato, sliced or diced
Arrange the cut wraps on a baking tray (NO oiling needed). Bake at 350F for 12-14 minutes until hard. Let cool and top with toppings.
Chocolate Almond Butter Stuffed Dates
These are a great chewy chocolatey snack! I recommend doubling the almond butter and storing it in the fridge for when the urge hits you.
Chocolate almond butter
1 1/2 tablespoons almond butter
1 tablespoon cacao powder
1 tablespoon maple syrup
Pinch of Himalayan or sea salt
Stir all ingredients together until smooth adding a little water if needed for desired consistency. It will be thick and sticky. Spoon into date halves. Store in the fridge for up to 7 days.
