CBD White Chocolate Bars (Keto/Vegan)

I'm so excited to share this simple and delicious recipe for healing CBD white chocolate bars today - you can make it as cups too. This recipe is keto, vegan, and paleo.

Have you tried CBD yet? It's popping up everywhere these days: in skin care products, pet food, snacks, treats, as tinctures, and I even CBD infused water recently. I first tried CBD oil about 4 years ago for inflammation and anxiety - two of the well known benefits.

CBD (cannabidiol) is a compound found in the marijuana plant, but it is NON-psychoactive (it has no THC), meaning that it won't get you high. It's perfectly safe to take any time of the day or night.


Recently I discovered Reef CBD products (which use organically grown hemp) and have been taking the tinctures every day for the past two weeks - every morning when I wake up and an hour before bed, as directed. I've noticed a definite difference in giving me a deeper sleep.

The tinctures come in 4 different flavours: peppermint, citrus, berry, and lemon, and are flavoured with essential oils. They also have CBD honey sticks.

CBD White Chocolate

Keto/Vegan/Paleo

1/2 cup melted cacao butter

2/3 cup melted coconut butter

1/4 cup raw cashew butter

3 tablespoons powdered xylitol

2 1/2 teaspoons Reef CBD tincture (peppermint is my favourite)

Whisk all ingredients together in a bowl. Pour it into silicone cups and/or chocolate bar molds. Place into the fridge until hard, about 30 minutes.

Notes:

  • For a light colour and neutral taste, be sure to use raw cashew butter.
  • Be sure to use already powdered xylitol or powder it yourself in a coffee grinder.
  • You can sub lakanto for the xylitol but you must powder it first.
  • You can use any of the CBD tinctures depending on your preference.
  • For the pink chocolate bar, I added some pink pitaya and beet powder to achieve the shade I was going for - this is great with the berry CBD tincture.

Chocolate Marbling

To create the chocolate marbling:

1/4 cup chopped dark chocolate (use 100% for keto)

1 teaspoon melted coconut oil

Add the chocolate and oil to a heat proof bowl set over a pot of hot water on the stove. Slowly melt it. Make sure that your white chocolate mixture is made and ready to go. Drizzle some of the chocolate into your molds. Pour the white chocolate mixture on top. Pour even more chocolate on top if desired, and use a toothpick to swirl it around. Place into the fridge to set.
