Sweetly Raw – Chocolate Banana Bread (V, GF, Nut Free)

Banana bread and chocolate lovers, do I have the recipe for you! Banana bread has been a favourite of mine ever since I was a child - it still is! There's something so comforting about a slice of moist, freshly baked bread studded with chocolate chips (of course). I've taken this loaf to the next level by adding cacao powder to the mix for a double chocolate experience.

The best part? You can whip it up in a matter of minutes in one bowl. It's moist, rich, and chocolatey - and is made with the simplest healthy ingredients. It's vegan, gluten free, nut free, refined sugar free, and low in fat. Very inexpensive to make too!!

You probably know the rule - use super spotted bananas for the best flavour.

Start with the lesser amount of coconut sugar, taste the batter and add more if you want.

Double Chocolate Banana Bread

1 1/4 cup oat flour*

1/4 cup tapioca flour

2/3-3/4 cup coconut sugar

1/3 cup cacao powder

1 tablespoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 1/4 cups mashed spotted banana

1/4 cup warm water

2 tablespoons melted coconut oil

1 teaspoon coconut oil

1 teaspoon vanilla

1/2 - 1 cup dark chocolate chips

Preheat an oven to 350F. Whisk the dry ingredients together in a bowl. Make a well in the middle and add the wet ingredients. Stir it all together. Spread into a nonstick 9x5" bread pan. Bake for 36-38 minutes, until an inserted toothpick comes out clean (though it may be a little chocolatey if you happen to insert it into a chocolate chip so stick it into a few spots in the bread). Let cool for 20-30 minutes before inverting to gently release the loaf from the pan. Let sit on a cooling rack and cool before slicing or it will be really crumbly.

*Blend gluten free oats to powder in a blender.
