Sweetly Raw – Maple Chocolate Tahini Granola (Vegan/Nut Free/GF)
For the past several months I've been on such a granola kick! It's one of my favourite toppings for smoothie bowls because I love to have something crunchy in combination with the creamy smoothie. I recently had a craving for some chocolate granola, and being the tahini lover that I am (I drizzle it on so many things) I thought, why not combine the two?! Maple syrup is always my sweetener of choice for granola and so the following recipe was born.

It's vegan, nut free, refined sugar free, and gluten free as long as you use certified gluten free oats. It's chocolatey, sweet but not too sweet, chunky and crunchy. I've used a high ratio of coconut and seeds in order to keep it lower on the grain side. I personally like using both coconut FLAKES and shredded coconut for different textures and the flakes in particular are really lovely when they're all toasted up, but that being said, you can use one or the other if it's all you have.
Maple Chocolate Tahini Granola
Vegan - Gluten Free - Nut Free
2 cups oats*
1 cup coconut flakes
1 cup shredded coconut
1 cup seeds of choice (I like a mix of pumpkin and sunflower)
1/4 cup sesame seeds
1/4 cup cacao powder
1/2 teaspoon himalayan salt
1/3-1/2 cup maple syrup**
1/4 cup tahini
1/4 cup melted coconut oil
Preheat an oven to 325F. In a mixing bowl, stir the dry ingredients together. Whisk the wet ingredients together in a separate bowl and pour over the dry. Stir it all together until well mixed. Spread a thin layer over 2 parchment paper lined baking sheets. Bake for
<span itemprop="cookTime">20-25 minutes</span> until fragrant and toasty. Let it cool completely and then break it up (if you want some chunks) OR stir it around right after it comes out of the oven for loose pieces.
*small or large flake
**I go with 1/3 cup and it's not too sweet at all which is what I prefer for granola. Mix and taste and see if you want to add more.
