Winter Dinner Party

Making raw food for others is my most favourite thing to do. Adam and I prepared a gourmet raw feast for 12 people a few nights ago. I do a dinner like this once or twice a year, complete with different menu options for a bit of variety (couples usually get each and share).
Holiday Menu 2009

Creamy Veggie Soup
Spinach, zucchini, cilantro, avocado, tomato, miso, dill, lemon, garlic, himalayan salt

Veggie Nori Rolls with Mango Ginger Dipping Sauce
Parsnip cashew rice, cucumber, red pepper, carrot, avocado, romaine, in nori
Eggplant Lasagna
Eggplant noodles layered with sun dried tomato sauce, marinated mushrooms, zucchini, and spinach in creamy seed cheese - dehydrated to perfection
Mexican Pizza
Sprouted buckwheat/corn crust topped with buckwheat "refried" beans, chipotle nut cheese, tomato pepper salsa, lettuce, avocado, drizzled with more cheese
Lemon Meringue Tart
Cafe Gratitude's Lemon filling in a macadamia coconut crust, with coconut whipped cream and Adam's cranberry drizzle
Ice Cream Sundae
Vanilla, chocolate, and banana ice creams, topped with strawberry, caramel, and chocolate sauces, buckwheat crunchies, walnuts, and fresh banana
Wild Blueberry Cake
Creamy blueberry filling on a date nut crust, with fresh orange and pomegranate sauce
Blueberry Cake

Crust: 1 cup almonds
2/3 cup pitted, dates

In a food processor, grind the almonds. Add the dates and combine.

2 cups wild blueberries
1 cup cashews
1 tbs lemon juice
2-3 tbs melted cacao butter

Blend the first 3 ingredients until smooth. Add the butter and blend to incorporate. Pour over the crust and chill to set (I did it overnight).
Pomegranate Sauce: squeezed pomegranate seeds, strawberries, agave, coconut oil, lemon juice
