These are great when you want a healthy waffle that is gluten free, grain free, nut free, and dairy free. I served them with coconut yogurt mixed with beet powder to make it pink. I've used cassava flour for this recipe. It comes from the yuca root (it gets dried and ground down), making it a perfect flour substitute when you want something that its gluten free, grain free, and nut free. It's white in colour and looks and feels similar to regular wheat flour although it doesn't always work as a 1:1 sub in recipes so you may need to experiment depending on what you're making.
1 cupfull fat coconut milk(from a can. make sure to whisk it up first)
2largeeggs
1/4 cup melted coconut oil
1tbspmaple syrup
Cinnamon Apples
1tspcoconut oil
1 largeapple, cored and slicedAny kind
2tspmaple syrup
1/2tspcinnamon
Instructions
Preheat a waffle iron.
Whisk the dry ingredients together in a bowl.
Whisk the wet ingredients together in a separate bowl and add to the dry. Stir to fully combine.
When the waffle iron is hot, grease it, divine the batter into 4 and pour into the iron. Cook for about 6 minutes. The waffles will be golden brown.
Cinnamon Apples
Heat the oil in a frying pan over medium heat on the stove. Add the apple, maple and cinnamon and saute for 4-6 minutes until the apples are softened and cooked. Spoon over the waffles.
