The Best Paleo Waffles

These are great when you want a healthy waffle that is gluten free, grain free, nut free, and dairy free. I served them with coconut yogurt mixed with beet powder to make it pink.
I've used cassava flour for this recipe. It comes from the yuca root (it gets dried and ground down), making it a perfect flour substitute when you want something that its gluten free, grain free, and nut free. It's white in colour and looks and feels similar to regular wheat flour although it doesn't always work as a 1:1 sub in recipes so you may need to experiment depending on what you're making.
